The viticultural and wine-making Company “I Pàstini” was founded in 1996 and it is located in the heart of the d’Itria Valley (the valley of the trulli) in Puglia, on a grapevine cultivated surface of 12 hectares.
The company, run by the Carparelli Family, has the purpose to recover and increase the value of the local grape varieties, to make sure that it would be possible to get the best of enology production from the Puglia region, thanks to preservation of the traditions and it’s association with modern wine-making techniques; the wines will be the expression of the new face of the local wine-making, authentic and genuine.
That’s the reason why the Carparelli Family has chosen the name “I PASTINI” from the latin word Pastinum meaning “hoe” and deriving from “land addressed to the grapevine”.
The grapevines that belong to “I Pastini” are all in the centre of the territory, between the municipality of Locorotondo and Martina Franca. This area has always been characterized by the production of great quality local white grapes of Verdeca, Bianco D’Alessano and Minutolo, in the vineyard of “Cupa, Rampone and Faraone” located on a wide valley at 350 metres above sea level, visible from elevation hills of Martina Franca (431 mt above sea level) and Locorotondo (410 mt above sea level).
These vineyards extend from north to south and they are consequently exposed to the sunlight from dawn to dusk; The valley benefits from the constant flow of air from the north, which mitigates the hot summer temperatures and guarantees a balanced daily temperature range, making the quality of the grapes excellent.
The ceaseless sunlight and ventilation are the main advantages to make these grapevines perfectly healthy, enrich them with aromatic essences and give them a flawless balance of bitterness and sugars.
This accurate selection of the land realized by I Pastini Company allows wine-making of unique white grapes , giving unique features to the organoleptic structure of the wines, which are produced with pride from the most authentic tradition. These are the reasons for the interest of ITA.I.WINE in the wine production of d’Itria Valley and especially for the company “I PASTINI”.
